500 grams red pumpkin
2 large onions
half teaspoon mustrad seeds
4 cloves garlic
o.25 teaspoon turmeric powder
half inch piece Ginger
4 green chillies
lemon-sized ball tamarind
2 tablespoon oil
salt to taste
half teaspoon sugar
one tablespoon chopped coriander leaves
clean and cut the pumpkin into half inch squares, wash and keep aside. Slice the onion finely and chop the garlic, ginger and chillies into small bits. Soak tamarind in half cup water.
In a pan, heat the oil, fry mustard seeds, add the sliced onion, garlic, Ginger and green chillies. Lightly fry all together for 5 minutes. Then add turmeric powder. Fry a little more. Put in the pumpkin, a little salt and stir well. Cook for 10 minutes, well covered. Remove cover, stir add a little water. Cover pan and continue cooking until the pumpkin is tender.
Add the juice of the tamarind and half teaspoon sugar. Stir well, letting it simmer for a few more minutes. Serve sprinkled with chopped coriander leaves.
