Caramel ice cream is one of the most loved desserts, being easy to prepare and suitable for any occasion, even if it’s about a special event or a regular familly meeting. It is soft, creamy, delicious and it also looks great!
1 tsp vanilla extract
3 cup sugar
1/4 cup water
1 cup whole milk
8 large egg yolks
150g melted chocolate
-Brown 2 cups of sugar( dissolve the sugar and stir until it becomes brown). Take it off the heat, add the boiling water, stirring constantly, without scorching it, until the caramel is entirely dissolved;
-In a large saucepan, combine the eggs, the milk( make sure it is well chilled before use), the melted chocolate and the remaining sugar;
-Smooth out any lumps and bring to a boil;
-Add the caramelized sugar into the other mixture, and beat with an electric beater, stirring constantly until the new mixture is melted;
-Remove from heat and add the vanilla extract;
– Fill the cylinder of an ice cream freezer with the mixture and freeze until the ice- cream is firm.
You can also use caramel sauce instead of home made caramel.
