If you are into seafood and looking for a fast, simple to prepare, appetizer to serve during the holidays, how about some Festive Shrimp Rollups. They’re a big hit in my home at any time.
Festive Shrimp Rollups Recipe:Preheat oven to 375 degrees F.
Ingredients:20 Jumbo shrimp (peeled, deveined, heads and tails removed)
20 Cremini Mushroom Caps (washed and halved)
2 Packages of Crescent Rolls
1 Tablespoon of Garlic Butter
Salt and Pepper to taste
1-1/2 Tablespoons melted butter
Preparation:Heat up your Saute Pan on medium heat and melt the Garlic Butter.
Lightly Saute the shrimp with the mushrooms. Season to taste with salt and pepper.
Unpackage the crescent rolls and spread them onto a cookie baking sheet.
Carefully place one sauteed shrimp onto the wide end of the crescent roll and then place two mushroom halves onto the roll and carefully begin to roll it together.
Continue this until you have rolled up all of your shrimp.
Lightly brush each rollup with the melted butter and then pop the tray into the pre-heated oven for 10 to 15 minutes until the roll up is a golden brown.
Remove your rollups to a serving tray.
Serve hot with your seafood coctail sauce.
Seafood Cocktail Sauce Recipe:
This can be prepared a day or so in advance and chilled
In a mixing bowl Whisk together:
4 oz. Ketchup
3 oz. Horse Radish
1 oz. Worcestershire Sauce
3 to 4 dashes of Hot Sauce ( or to taste )
1 Tablespoon of Lemon Juice
1 Teaspoon of Lime Juice
Salt to taste
Whisk until all ingredients are combined
Spoon this mixture into a serving dish and serve it with your shrimp
