Lemon Squares are a favorite dessert both in our home, and at our Saturday Evening Prayer Meetings during the potluck social dinner, so I thought I would share my recipe so others could make them and enjoy them too.
Sometimes I will take shortcuts in order to prepare something if I am pressed for time but still wish the same results. This is one of those times as I substitute packaged lemon pie filling, rather than making my own. The taste experience is the same though.
I am also substituting a Graham Cracker Base for a more traditional Pie Crust Base.
Ingredients:30 Graham crackers (rolled fine)
1-1/2 Tablespoons Granulated sugar
3/4 Cup Salted Butter
1/2 Cup Semi-sweet Chocolate (coarsely grated)
2 Pkgs. Lemon Pie Filling
1 Tablespoon Lemon Rind (finely grated)
Instructions:Preheat oven to 300 F. heating time 15 minutes
grease a 13″ X 9″ baking dish
In a bowl combine your graham crackers, sugar, butter, and semi-sweet chocolate bits.
Once combined lay this mixture into the bottom of the pre-greased baking dish and place it in the oven to cook for 15 minutes and then remove to cool.
Prepare the packaged lemon pie filling following the instructions on the package and fold in the grated lemon rind.
Once the filling is prepared as directed pour the mixture into the dish with the graham cracker base covering the base completely.
Place the dish into the fridge to chill at least 2 hours
To ServeCut into 2 inch squares, and top each one with some Cool Whip and sprinkle with Cocoa Powder
If you don’t wish to add the Cool Whip and Cocoa Powder, simply sprinkle with a little Confection Sugar.
