How to make stinking bean curd

The Chinese stinking bean curd famous for its unique flavor of being salty, hot ,stinking. Maybe you pinch your nose hearing Stinking, but once you have a taste at it, you will know it is very, very delicious in stead of being stinking. The more stinking it smells, the more delicious it tastes. Why not have a try? Stinking bean curd is from Sichuan province with long history of one thousand years. The hot and damp weather in Sichuan province made native of Sichuan much fond of hot ,salty food ,among which is Stinking bean curd. Not only southerners including native of Sichuan are fond of it, but also northerners are. The way to make stinking bean curd is just so simple and easy that everyone can try it as following steps:

          一 Grind Soy- bean Get some dried fresh soybean and put them to mill for grinding them into smallest pieces. Hold these pieces in container then pour cold water into container and don’t forget to stir up thoroughly for soaking about thirty minutes.

         二.Grind Mixture Thirty minutes later ,the mixture is soaked soft. Then ladle them to mill again little by little ,please remember evenly mixed with water, if water is few left ,just add more .The mixture are grinded into white fluid streaming down into container,which is called raw bean curd milk.

         三.Cook raw bean curd milk till boiling, and ladle boiling bean curd milk into cloth-bag and then press the bag, the white liquid filtered through the bag is what we want ,the dregs left in bag are useless.

        四.Put the filtered bean curd milk back into the pot under which no fire should be burning. What you shall do is to gently stir up them with ladle by adding some substance for precipitating bean curd milk till all bean curd settle down under clear water ,now you may press down white sediment(bean curd) with bamboo tool and cook them again till boiling

        五.Cut newly-precipitated bean curd into small cubes and place them in dry and air-tight container under which is underlay with dry straw for two weeks. .Two weeks later, when you uncover the container, you may smell them slight stinking and covered with mildew, even black ,which is natural reaction .Just neglect it. Please place them carefully into another container by adding minced red pepper ,wine ,salt and other perfume for safekeeping another two weeks.

            Stinking bean curd is just a minor dish ,but it often appears on banquet and very popular among guests including foreigners .When you come to china, don’t forget to have a taste.
