Dessert should be something that we can really enjoy, as the perfect ending to a meal. Desserts should also be something simple and easy to put together in a short time. Here is a dessert recipe that is easy and simple to prepare as that perfect ending.
Preparation time = 10-15 minutes
Cooking time = 10-15 minutes
Ingredients:8 kiwi (peeled and sliced)
8 strawberries (halved or sliced) for garhish
1 cup lemon-lime soda pop
2 packages gelatin
2 and a 1/2 cups graham cracker crumbs
1/4 cup salted butter or, margarine
2 tablespoons brown sugar
1 -9 inch glass pie dish (for oven or microwave)
Insrtuctions:If you use the oven for the pie shell pre-set it to 375 degrees F. But, the whole thing can be done with your microwave if you desire.
Graham cracker crust:
In a microwaveable mixing bowl combine your butter or margarine with your brown sugar
In your microwave, set on “High” for 30-35 seconds melt your butter or margarine and brown sugar
Remove from the microwave and add in your graham cracker crumbs and blend them together.
Spread the crumb mixture evenly to completely cover the pie dish and then either place in your Pre-heated conventional oven for 3 to 4 minutes at 375 degrees F., or, into your Microwave on “HIGH” for 2 minutes.
Remove and allow to cool
In a medium sized sauce pan, on medium heat combine your Lemon-Lime Soda and (6) kiwi (sliced) boil for approx. 5 minutes.
Filling Preparation:
Add in your two packages of gelatin and stir or wisk until everything begins to thicken and comes into a gel.
Taste for sweetness. If the mixture is to tart, add in white sugar 1 teaspoon at a time to taste. When you’ve found your taste comfort, remove from heat.
If desired you could add a few drops of “Green” food coloring to intensify the depth of color in your filling. (Food coloring has no taste to it.)
Allow your filling to cool a little before assembling it into your pie shell. (spread evenly)
Slice your remaining two kiwi and arrange them to decorate the top of your dessert pie. Use your strawberries as decoration also.
Place your completed dessert in either the refrigerator or in your freezer to set up. If you use the freezer, allow to thaw before serving.
When serving you can serve it up with a dollop of whipped cream, or, my favorite, a scoop of butterscotch/ripple ice cream, or simply serve it as is.
